CHAPTER 14

Behind the Curtain, Anonymous Restaurant Publicist, USA

She’d wanted to be a chef.

That was her plan, anyway, but her parents made her go to college first, so she picked a school in a city with a great food scene and found an internship with a public relations firm that specialized in hospitality. While there, she met a bunch of chefs and realized that she’d never be able to cut it in the kitchen (making her parents happy), but she wanted to stay around food, and so when she graduated, she applied and got a job as an account coordinator at a large PR firm that worked with restaurants in a big city.

An account coordinator was the lowest on the chain. Up top there was the executive director—the most powerful person, the person who goes to the big meetings but doesn’t actually do any work on accounts—and then the account supervisors, who manage the work of account executives and account coordinators but are also responsible for finding new business, and then the account executives, who at least get to take meetings themselves and create agendas.

Account coordinators did not do any of that. Her day-to-day as an AC basically consisted of culling through magazines, online publications, and newspapers to find editors and writers to pitch and then writing pitches for every client nearly every single day: the new wine program at this restaurant, a St. Patrick’s Day event at this bar, a new spring menu over here, etc. They used the company Cision’s database, a crazy-expensive service that provided profiles of countless journalists, listing their specific beats, phone numbers, and emails.

Each day, using the database, she would send the same pitch to fifteen to twenty writers using an email system that would BCC everyone and hopefully enter their first names in the correct prompt, but of course this didn’t always work and so writers occasionally received emails with wrong names or just [ENTER WRITER’S NAME HERE], which those writers would then tweet out as further evidence of PR people’s stupidity. She knew in her heart of hearts that most of these email blasts were actually stupid and ineffective and that she wouldn’t get a response, but the emails weren’t about the actual writer so much as being able to show the client a lengthy monthly report showcasing any media results naming the client, and any stories in the works, but also stories pitched and the outlets they’d been pitched to. Sending out these mass pitches was crucial for padding the report.

While the day-to-day was boring, one of the perks of being at a big firm was that they worked with some amazing people—James Beard winners, Michelin-starred restaurants, etc.—and almost every night there was something to do. The majority of her coworkers were female, and the rest were gay men (in all her time on the job, she’d met just one straight male restaurant publicist). Of that 90 percent majority of women, 75 percent usually fit the same profile: white, attractive, under thirty-five,
