It is often asserted that social changes, and particularly those experienced in the way of feeding a country, have been greater in the last 50 years than in all previous centuries.

On the other hand, the socioeconomic advances and the technical changes occurred in all the points of the food production chain (agriculture, livestock, production, storage, sale, etc.), have spread and made available to any electrical equipment, products and unthinkable modes of consumption simply two decades ago (microwave ovens, precooked foods, deep-frozen foods, meals made under collective catering, etc.).

At the individual level, changes in lifestyle have resulted in a general decrease in energy expenditure, especially due to the growing mechanization. Also, there has been a decrease in thermoregulation expenses with the diffusion of air conditioning units.

The possession characterizes modern societies, in major sectors of the population, of more food than can be consumed, the generalization of the consumption of chemically pure substances, greater longevity together with the reduction of infant mortality, the increase in mechanization with the consequent reduction of physical work and energy needs. It should be borne in mind that the needs in certain nutrients do not decrease even if the energy needs do; in these conditions, we could find ourselves in situations of relative deficiencies of some nutritious substances.

Throughout the twentieth century, society has been producing important changes that have dramatically modified the dietary habits of the population, impacting consequently on their nutritional status. Especially in the last 40 years, these changes are related to industrialization, urbanization, and technological and economic development that have given rise to new forms of production, processing, and distribution of food.

The way of feeding ourselves has varied substantially. The fact of having a greater supply of food, although much more processed and processed, to the detriment of fresh, unprocessed products, has undoubtedly contributed to this change; besides a greater purchasing power and the social transformations that have happened. Overall, we can point out that society is more taxed at the moment of proteins than it was during the last century, has also produced an apparent decrease in the consumption of carbohydrates and a very significant increase in the intake of fats.

Proper adjustment to eating healthy means many things: food quality, conscious choices, sustainability; but also attention to diet, sports activity, quantity and variety of foods consumed as well as the way food is prepared.
