Pepper Jack Brussels Sprouts

Prep Time: 20 mins

Ingredients

● 2 pounds Brussels sprouts, halved and boiled

● 2 tablespoons garlic, minced

● 3 cups pepper jack cheese, shredded

● 2 tablespoons coconut oil

● 1 cup sour cream

Directions

Heat oil in a skillet on medium heat and add garlic.

Sauté for about 1 minute and stir in the sour cream and pepper jack cheese.

Cook for about 5 minutes on medium low heat and add Brussels sprouts.

Stir to coat well and cover with the lid.

Cook for about 5 minutes and dish out into a bowl to serve.
